The Hakata specialty "Mentai-ju" is a whole skewer of carefully marinated kelp-wrapped cod roe served on top of steaming rice covered in nori seaweed.^®︎When eaten with "Mentaiju® Sauce," which is full of umami ingredients and is specially formulated to match the mentaiko, the original flavor of the mentaiko is further enriched.

The mentaiko is soaked in a seasoning liquid containing a variety of umami ingredients, such as kelp and chili peppers, allowing the flavors to soak in slowly.
At our restaurant, to further enhance the umami flavor, we wrap each piece of mentaiko by hand in kelp that has been soaked in a special seasoning sauce.

The popular "Mentaiko Nikomi Tsukemen" has been developed as Original Goods.
The dipping sauce is made by slowly simmering the rich mentaiko, a stock made from flying fish and kelp, along with vegetables such as tomatoes and shiitake mushrooms, so you can enjoy it down to the last drop.
The chewy, medium-thick noodles are sticky, and when they are coated in the dipping sauce, which is full of richness and flavor, you can really taste the mentaiko.
